PEANUT CURRY SAUCE: A MASON JAR RECIPE

This sauce was inspired by a Thai place I used to frequent when I was in law school. They served sticky rice to dip in a peanut curry sauce like this one.

1 can coconut milk (you can use light)
1/3 c. peanut butter
2-3 T. curry powder
2-3 T. garlic chili sauce
1/2 t. salt

Whisk ingredients in a sauce pan and bring to a boil.  Remove from heat.  Serve warm or cold.

Notes:

• You can vary the heat and the intensity of the flavors by adjusting the curry powder and the garlic chili sauce.

• You can find the garlic chili sauce with the Asian foods in most grocery stores.
